Baked macaroni seems to be one of those dishes that at first glance, seem very American. Yet did you know that like all pasta dishes, the good 'ol mac and cheese actually has roots in Italy?
Pizzeria Vecchia gives you a taste of authentic Italian mac and cheese right here in Janesville. Our cacio e pepe, or cheese and pepper pasta, is made of the simplest ingredients: homemade macaroni noodles, a dash of pepper, and a rich sauce of Grana Padano and Pecorino cheeses.
These authentic cheeses from the heart of Rome are what make our cacio e pepe so irresistible. The velvety texture of the Grana Padano perfectly complements the sharpness of the Pecorino. We create a thick pan sauce and toss in our macaroni to coat it evenly, before sprinkling it with parmesan. It then goes into the oven to bake.
We serve our cacio e pepe piping hot, with a fresh sprig of summer herbs on top.
